Meal time became a simple feeding exercise, I had lost my dining experience. I had to recapture that portion of my life and, well, dine with dignity, independently...even in public. It is simple things like this that seem to help each of us feel better about ourselves. My task was clear."

| Welcome! My name is Erin Poyle. I am a Michigan born, Colorado educated, self-taught 30something quadriplegic chef. I was injured in a car accident when I was 17. At the age of 20, when I wasn’t having fun, or taking classes at community college, I spent a lot of time watching food programs with my dad. At the time, I couldn’t even begin to imagine this would be my greatest passion. Subconsciously, I must’ve been really paying attention, because once I actually began cooking more adventurous stuff than spaghetti with sauce from a jar, I realized I had all this information at my disposal. It was like in The Matrix, having been trained in my head and then putting it to practical use on the stove!

Life with a disability is a delicate balance of trying to stay healthy and avoiding any associated secondary health issues. It is often the secondary health problems that prevent us from living independently. That’s why proper nutrition and healthy living are essential. |
| I am a recent graduate from the Institute of Holistic Nutrition (IHN) and am now a Certified Nutritional Practitioner (CNP). Previous to attending IHN I completed a Bachelor of Science at the University of Toronto. I have always had a passion for nutrition and finding ways to use healthy foods to look and feel your best! I believe the key to a healthy and happy lifestyle is balance. You don't need to give up eating all your favourite foods in order to be healthy. Sometimes the best way to improve your diet is to start adding nutritious foods into your daily life. Eventually once you start to notice a difference in yourself you will no longer even want to turn to your old friend "the big mac". As a holistic nutritionist my goal is to help people regain their health and look and feel their best by incorporating real foods into their diets and making healthy lifestyle changes! |
